Kate's Favorite Chocolate Chip Cookies

Kate's Favorite Chocolate Chip Cookie Recipe 
(Easy Even for those who don't bake!)
I am certainly no baker - Cooking, much more like an art that you can craft, tweek and even mess up will likely still turn out to still be something delicious. Baking is more like a science. Measuring, adding things at certain times, making sure they are the right size to fit the bake times. No... Not for me. BUT I love desserts and have so many great many memories of my mom baking all the time. There was rarely a week where there wasn't something sweet and home made in the house. Her Betty Crocker pages were stuck together with flour and butter but she never disappointed. Even to this day when she comes to visit she'll grab what I have in the pantry and bake us cookies, pies or cakes! And today when I was craving a homemade chocolate chip cookie from mom I decided to give it a try using a tried and true recipe that's so easy.... I can't even mess it up! 
These are soft, slightly crisp on the edges and perfectly mouth watering! 

Don't worry - You wont have fold butter 


 Here's what you need to grab. 
  • Large mixing bowl
  • Hand Mixer with large mixing attachments
  • Small bowl to soften/melt butter
  • Measuring Spoons
  • Measuring Cups
  • Silicone Baking matt 
  • Baking Sheets
  • Spatula 
  • Spoon or Ice-cream scoop
Ingredients needed: 
  • 2 sticks of Butter
  • 1 cup of Sugar
  • 1 cup of brown sugar
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of baking soda
  • 2 teaspoons of hot water 
  • 1/2 teaspoon of salt
  • 3 cups of all-purpose flour
  • 2 cups of semisweet chocolate chips
  • (or 1 cup of chocolate chips and 1 cup of Hersey kisses....cause that's what I had on hand) 

Mmmmm I'm thinking about a tall glass of milk already 


What to do next: 
Pre heat your oven to 350 degrees and then grab your butter and pop that into the small bowl. Microwave that for about 30 seconds (if it came out of the fridge) to soften but not completely melt.

After that is ready dump that into your large mixing bowl along with your white and brown sugar. Use your hand mixer to cream those items together. Then mix in one egg at a time and add in the vanilla. Mix well. 

Put hot water in a small measuring cup and dissolve the baking soda with a quick stir. Then add that into the batter along with the salt. Mix well. 

Set aside your mixer and grab the spatula and the flour. 

Add your flour just one cup at a time. Hand mixing with the spatula after every cup until everything is incorporated. Then add in your chocolate chips and mix well into the batter. 

Grab your spoon or small ice-cream scoop and spoon out lime size balls of dough onto your baking sheets covered with silicone matts. You may need to do several rounds depending on the size of your cookie sheet. 

Bake in oven for 12-15 mins or until the edges are crisp. Let cool on cooling rack and ENJOY! 

Grab them 30 minutes or so after baking and the chocolate will still be gooey.... Yes, please!
