Lentil Meatballs


Lentil Meatballs

This one is really great over pasta, covered in Pasta sauce or in place of the traditional meatball!

1 Onion
2 T Minced Garlic
1 T Basil
1 T Thyme
1 T Oregano
1 C Lentils
1 C Water
1/2 Cup Whole Wheat Bread Crumbs
2 C Veggie Stock
1 Flax Egg
1 C Nuts (Almond or Cashew)
1 C Nutritional Yeast

Pre Heat Pan on medium low - Dice Onion and sauté in pan with Garlic. Cook for 5-8 minutes until onions are done. Add Water, Veggie stock and Lentils to pan along with Thyme, Basil, Oregano. Boil then reduce to low for 45 minutes.

Once Lentils are done let cool, while cooling make flax egg and process 1 C of nuts in food processer.

Add Lentil mixture, Whole Wheat Bread Crumbs, Flax Egg and processed nuts to large bowl. Then add Nutritional yeast, Salt/Pepper to taste. Mix and form in to balls.

Cook 375 for 30 minutes, Flip Half way - And Enjoy!
