Smokey Joe's

Plant Based - Smokey Sloppy Joes

This is fun twist on the all time family favorite "Sloppy Joe". The chipotles give it a Smokey flavor that makes this one a fun bite to eat! We love to eat this with some Avocados and Baked Blue Corn Chips on the side.

Ingredients Needed:
1 Block of Extra Firm Tofu
1/2 Large Onion
1 Red Bell Pepper
2 T Garlic Powder
2T Minced Garlic
20 Oz of Tomato Sauce
3.5 Oz of Chipotles in Adobo Sauce (Dice up)
2 T Italian Seasoning
4 T Worcestershire Sauce
1 T Apple Cider vinegar
1/2 C Corn (Frozen or Fresh)
Salt and Pepper
Whole Wheat Hamburger Bun

Preparation:

Pre Heat oven to 425.
While oven pre heats drain Tofu and crumble onto a sheet pan covered in foil. If you want a finer dice then you can mince it in the food processer but for us crumbling it with my hands does just fine. You do not need to press the Tofu as the cooking process does that for you. Dice your Red Bell Pepper and Onion and add to sheet pan mixed in with the Tofu. Salt/Pepper as desired.  Roast in the oven for 25-30 mins or until veggies are cooked. Check on it 1/2 way to ensure Tofu is not burning, give a stir if needed.

While veggies and tofu are cooking, grab a pan and start the sauce. Add Tomato Sauce, Garlic Powder, Minced Garlic, Diced Chipotles in Adobo Sauce, Italian Seasoning, Corn, Worcestershire and Vinegar.  Mix well and heat until it comes to a boil. Lower heat to a simmer, stir and let it still while your other ingredients finish up in the oven, stirring occasionally.

Once Tofu/Veggies are done add to Sauce and mix thoroughly until well incorporated.

Serve on top of a Whole Wheat Hamburger bun and Enjoy!!!

**If you prefer your tofu to have more flavor you can mix it with a little Worcestershire, Garlic, Adobo Sauce and Italian Seasoning, prior to putting on sheet pan. This will allow it to pick up even more of a Smokey flavor**
