Mushroom Soup

This was a request from John - He loves mushrooms and wanted something full on mushroom flavor. It is a clear broth soup that is quick and easy to make but has a ton of hearty flavor, serve with some whole wheat bread or a salad and enjoy!

1 T Avocado Butter
2 Shallots
12 oz Porcino Mushrooms (Or any mushrooms you like)
4 T Minced Garlic
4 T Parsley 
1 T Worcheshire  Sauce
32 Oz Vegetable Broth
16 Oz Water
Salt/Pepper to Taste

Start by adding Avocado butter to soup pot, Sauté Shallots and garlic for 3-5 minutes until soft, add mushrooms and Worcheshire sauce,  sauté 5 mins until softened. Add Vegetable Broth and water to pot. Add Parsley and Salt Pepper. 

Bring to Boil - Let simmer 15 Minutes prior to serving. 
Add additional Salt/Pepper/Parsley to soup once served.
